Homemade popcorn is a delicious snack free from ultra refinement! Change up your toppings and seasonings to keep it interesting. ½ cup of kernels makes about 14–16 cups of popped popcorn! This “recipe” gives you options for dairy free, nut free and fun seasoning choices.
Ingredients
½ cup popcorn kernels
3 -5 tablespoons extra virgin olive oil or melted butter
1 tablespoon unrefined coconut oil or extra virgin olive oil (stove top version)
½ teaspoon fine sea salt
Seasoning:
1-2 teaspoon garlic powder
Or 1-2 Tablespoons everything bagel seasoning
Toppings:
¼ cup nutritional yeast
Or ¼ cup hard grated cheese like Parmesan or Romano
Directions
Instructions Air Popper:
Pop the popcorn kernels with an air popper into a large bowl.
Drizzle with the olive oil or melted butter.
Mix the nutritional yeast and salt together and sprinkle over popcorn and toss to coat.
Instructions Stove Top:
Add a tablespoon of the coconut oil to a 3-5 quart heavy-bottomed pot with a cover. Add 3 kernels of un-popped corn and heat over medium heat with cover on.
Melt the butter if using, in a small pan on low while you pop the corn.
When your three test kernels have popped, your pan is the right temp, remove from heat and add the rest of the kernels.
Return the lid and return over medium heat, shaking the pot frequently using pot mitts to keep the lid on until there are a few seconds between pops and most have popped.
Finishing Touches Either Way:
Drizzle butter or oil on top a little at a time. Sprinkle on your toppings and seasoning a little at a time, toss and repeat until all toppings are used up.
Enjoy right away or allow to cool just a few minutes and then store in an airtight container for several days.
