peanut butter oat bars

Looking for a snack that's a little bit sweet, a little bit salty, and totally satisfying? These peanut butter oat bars are dense and chewy, made with honey, rolled oats, and creamy peanut butter.

They're inspired by a favorite store-bought peanut butter bar - Bobo’s Bar Original PB Bar. They're easy to make with a single bowl, a small saucepan, and an 8x8 pan. Wrap a few up for lunchboxes, hikes, or an afternoon pick-me-up.

These are dense, chewy, mildly sweet and a little salty. You could use unsalted butter to reduce saltiness if you prefer. They are based loosely on a Bobo’s Bar Original PB Bar.

Tools

  • 1 8 x 8 inch (20 cm) pan

  • 1 sheet parchment paper

  • 1 stand mixer with paddle attachment or electric hand mixer with beaters

Ingredients

  • 3/4 cup + 2TBS (120 g) unbleached all-purpose flour

  • ¼ cup (30 g) whole wheat flour

  • 1 cup (86 g) rolled oats

  • 1/2 + 1/8 teaspoon baking soda

  • ¼ teaspoon salt

  • 1 tsp Ceylon cinnamon

  • ½ cup (113 g) unsalted butter

  • ¾ cup raw honey

  • ¾ cup (192 g) creamy peanut butter

  • 1 large egg, room temperature

  • 1 teaspoon vanilla extract

  • 1 cup (170 g) chocolate chips, optional

Instructions

  • Preheat Oven to 325°F. Lightly grease and line the bottom and sides of the pan.

  • In a mixing bowl, whisk dry ingredients until well combined.

  • In a small pan, melt the butter over low heat.

  • In a mixing bowl fitted with paddle attachment, add melted butter, blend in honey, peanut butter, whisked egg and vanilla. Mix until smooth.

  • Stir dry ingredients ½ at a time into the wet until just combined. If using chocolate chips, fold in.

  • Press the peanut butter oat dough into the prepared pan.

  • Bake for about 30-32 minutes or until the edges of bars are a light golden brown, slightly puffed up and the edges are slightly pulled away from the sides of the pan.

  • Cool the bars in the hot pan on a rack for 10 min. Use the excess parchment paper on the long sides of the pan and gently lift the bars out of the pan and to cool on a cooling rack. Allow to cool another 40 min, then slice and enjoy.

Notes

Store: in an airtight container at room temperature for up to 5 days. These also freeze well.
