No-Bake Nut & Date Energy Balls

Looking for something easy, sweet, satisfying and free from refined sugars and additives? This no-bake energy balls recipe is from Yummy Healthy Easy. Look for unsweetened raisins! The nuts and fiber balance out the sweet in this recipe to prevent big blood sugar spikes that make you crave your next treat in 30 min. These treats are rich in minerals and healthy fats unlike most store bough sweets. Store in the fridge to extend shelf life and to help them keep their shape.


Ingredients

  • 1 cup raw almonds

  • 1 cup raw walnuts

  • 2 cups raisins

  • 6 dates pitted

  • 1/4 tsp. cinnamon

  • 1/4 tsp. vanilla

  • 1 cup shredded coconut


Instructions

  • In a food processor, chop the almonds and walnuts until finely chopped and then add in the raisins, dates, cinnamon and vanilla.

  • Blend up until combined and sticky.

  • Pour coconut into a bowl.

  • Roll the date & nut mixture into about 1 inch balls and roll into coconut.

  • Enjoy!
