Honey Baked Apple Treat

Looking for something super easy, clean and delicious? This is a staple in our home. It can be be enjoyed where you might have a muffin alongside a cup of tea on a lazy morning or as a dessert on a chilly night. The delightful combination of sweetness, tartness, and spices fills your senses with "treat" pleasure, all while being something really good for you.


Honey is our go-to recommended sweetener as it's rich in minerals, has a moderate impact on blood sugar spike and is very delicious. The spices in the recipe have anti-inflammatory properties and support modulating blood sugar levels. This dish evokes flavors of fall and apple pie without the need for refined flours and sugars.



Ingredients:

  • 1/2 tsp cinnamon

  • 1/4 tsp pumpkin pie spice

  • 1/2 tsp lemon juice

  • 1 tbs cold butter, cut into small pieces

  • 4 organic apples, medium to large

  • 2 Tbsp raw local honey


Directions:

  • Preheat oven to 350 degrees, use a heavy glass or ceramic baking dish approx. 8” with 1 1/2-2’ sides.

  • Prep apples: rinse, optional to peel, core, cut up into bite sized pieces, transfer to baking dish.

  • Cut up butter into small pieces and sprinkle on apples.

  • Mix spices in a small dish, then dust the apples, turn a few times to mix.

  • Drizzle honey by the TBS on top.

  • Bake uncovered for 30-40 minute, gently turn/mix slices about halfway through baking time. Remove and serve warm when you can easily pierce them with a fork. Enjoy!
