Apple & Onion Baked Pork Tenderloin

This Apple & Onion Baked Pork Tenderloin recipe is a flavorful mix of savory and sweet. The juicy pork is roasted alongside apples and onions and is covered in a mustard glaze - delivering satisfying protein for steady energy, naturally sweet apples and onions for digestion-friendly fiber and antioxidants, and a gently tangy apple cider glaze that supports digestive function. It’s a rather easy, crowd-pleasing meal that feels comforting while still supporting your wellness goals.
Ingredients
2 pounds pork tenderloin (typically 2 — 1 lb tenderloins)
1 teaspoon coarse salt
½ teaspoon freshly ground black pepper
2 yellow onions, cut into 1-inch wedges
2 apples, cut into 1-inch wedges
½ cup apple juice
1 tablespoon organic apple cider vinegar
1 tablespoon whole-grain Dijon mustard
1 teaspoon dried thyme
¼ teaspoon ground cinnamon
Directions
Bring the pork to room temperature - let it rest on the counter for 20–30 minutes before cooking for the most tender result.
Preheat the oven to 350°F and lightly grease a roasting pan.
Season the pork evenly with salt and black pepper. Place in the roasting pan.
Arrange apple and onion wedges around the pork and lightly sprinkle cinnamon.
In a small bowl, whisk together apple juice, apple cider vinegar, Dijon mustard, and thyme for the glaze. Pour over the pork.
Cover and bake for 20 minutes.
Uncover, baste with pan juices, and continue baking for 10–15 minutes, basting every 5 minutes.
Remove from oven and let rest 5–10 minutes before slicing. Drizzle with accumulated pan juices and serve hot.
Notes:
Internal temperature should reach 140°F.
