Adrienne’s Late Summer Lazy Gardener’s Salad

This is a super simple and delicious summer salad. It's something I often will enhance it with the addition of protein to make a satisfying meal on hot nights after a day of gardening. The fresh herbs are the greens but it can also be good served on a bed of lettuce of your choice. The fresher ingredients, the better, and high-quality olive oil, makes it a real pleasure. Fresh, crunchy and refreshing!



Ingredients:

  • Cucumber 1-2 ¼ the long way then chop

  • Tomatoes (salad or cherry) 1 pint (equal volume to your cucumber), ½ to ¼ depending on size

  • 1-2 sprigs fresh basil- destem, coarsely chopped

  • 3-4 stalks fresh parsley- destem, coarsely chopped

  • 2 TBS fresh squeezed lemon juice or raw vinegar of your choice (Apple Cider or Red Wine Eden Organics

  • 1/3 Cup EVOO - we love Atlas Moroccan

  •  Salt and Pepper to taste.


Directions:

  • In a large bowl, mix all ingredients

  • Add protein to your taste at serving (i.e. grilled chicken, hard raw milk cheese and/or drained cooked beans. (We use Eden Canned Beans)

  • Enjoy!
