Tabbouleh makes great use of this time of year's garden abundance including parsley, mint, tomatoes and cucumbers. Traditionally made with bulgar (split whole wheat), this recipe is a gluten-free version from the Delicious SP Detox Balance™ Program Recipes book by Standard Process, which substitutes quinoa for bulgur wheat. However, this recipe can be made with bulgar wheat, if you prefer. I enjoy it with grilled shrimp marinated in lemon and garlic!
