This is my healthy easy food mantra these days. " What can I make today that will allow us to eat easily and healthfully for the next few days?"


This all raw, tasty, healthy and flexible vinegar based carrot slaw totally fits the bill! I recently tried this recipe out and just loved how fresh it tastes and how well it holds up to refrigeration during the week. In my second rendition I made it with equal parts raw shredded beets and carrot...it was amazing! You know it's hard for me to stick to a recipe...there are so many innovations that spring to mind.


Gorgeous color, great flavors, and we loved the last serving 5 days later! Raw beets are great in small quantities, too much too fast could cause uncomfortable detoxification symptoms. Go slowly by adding 2 TBS to your salad or as a side to your meal.



Beets are nutrient rich in vitamins, minerals and plant compounds that support heart, brain, muscle recovery, microcirculation and liver/bowel detoxification ( yes, I mean good bowel movements), liver health and healthy cholesterol balance while being low calorie.
