Watermelon & Lime
Watermelon & Lime

Stay hydrated on these hot, humid, sunny, summer days with this refreshing recipe for watermelon popsicles.

Watermelon is 91% water, rich in Vitamin C, Magnesium and Potassium. This makes it filling, refreshing and low calorie.

Not only delicious, these popsicles are a healthy and super simple summer treat with a variety of options to change them up. Check out the original blog post here for some ideas. Easy variations I like is to use coconut milk or coconut water to sweeten them and change up the texture.

Equipment:

Blender & popsicle mold

Ingredients:

All you need is watermelon (6 cups cubed) & lime (2 tablespoons)!

Instructions:

  • In a blender, place the watermelon and lime juice. Blend until completely smooth, then pour into popsicle molds, leaving ½ inch at the top for expansion.

  • Cover and add popsicle sticks if necessary. Freeze until set, 4 hours or overnight.

  • Enjoy!
