This Cucumber Mint Mocktail is a refreshing, hydrating drink that comes together in minutes. Crisp cucumber and cooling mint are brightened with fresh citrus and topped with sparkling water for a light, revitalizing sip.

Ingredients
Single Serving (1 glass)
4–5 slices cucumber
5–6 fresh mint leaves
Juice of ½ lemon or lime
6–8 oz sparkling or still water
Ice
Optional: ½–1 tsp honey or maple syrup, pinch of sea salt
Pitcher (Serves ~6–8)
1 large cucumber, thinly sliced
1 packed cup fresh mint leaves (about 1 bunch)
¾–1 cup fresh lemon or lime juice (to taste)
6–8 cups sparkling or still water
Ice
Optional: 1–3 tbsp honey or maple syrup, pinch of sea salt
Directions
Single Serving
Add cucumber and mint to a glass.
Lightly bruise (or gently clap) the mint leaves between your hands first to release their natural oils and aroma, then add to the glass.
Lightly muddle to release flavors.
Add citrus juice and sweetener (if using).
Add ice, top with water, and stir.
Pitcher
Add cucumber slices to a large pitcher.
